You might notice a little green in the photo. Those are green beans. One night, since I had fresh green beans on hand, I decided to throw them in with the potatoes. They turned out awesome. I am always looking for an opportunity to make meals more colorful - especially with green veggies. ;) Unfortunately my daughter wouldn't eat the green beans. She prefers hers raw which is fine with me. Her choice is actually healthier. She'll be getting more enzymes - but that's another post for another day.
