Whether you are a food adventurer like me or just love a new recipe or love coconut anything, you have to try this soup at least once. So rich and creamy!!
1 tablespoon extra virgin olive oil (or water or broth)
3 to 4 large leeks, chopped
3 large garlic cloves, chopped
1 medium head cauliflower, chopped
2 cups vegetable broth
1 15 ounce can coconut milk
Sea salt to taste
Black pepper to taste
Saute the leeks and garlic in the olive oil (or water or broth) on medium low heat until the leeks are soft. This should take about 8 to 10 minutes.
Next add the chopped cauliflower, vegetable broth and coconut milk. Cover and bring the soup to a boil, then lower the heat letting the soup simmer until the cauliflower is soft. You can then use a stick blender to puree the soup or put the soup into your blender to blend until smooth. If using your blender, it will take more than one batch. It's recommended to let the soup cool before blending. You can blend until completely smooth or leave it a little chunky. Personally I prefer a little texture and like to blend using a stick blender. (Very easy and there's less clean-up. Less clean up is always good!)
Finally, add salt and pepper to taste and enjoy!!
Note: In case you have never prepared leeks before....
To prepare the leeks, chop off the top dark green portion and throw it away. (Or clean well and save for making home made soup stock.) Slice off the end where the roots are. Then split the leek down the middle. Wash the leek well in cold water making sure to remove any sand in between the layers. Then chop.
Some leeks require very little washing and others require a little more. It really varies. It doesn't take long to prep it though either way.
