2 cloves chopped or minced garlic
2 Tablespoons coconut oil (optional - can sub broth for oil free)
1/2 onion, chopped
1 Tablespoon tomato paste
1 tomato, diced
2 celery stalks, chopped
4 carrots, chopped
1 fennel bulb, chipped
3 cups vegetable broth
1/4 teaspoon crushed red pepper
1 cup of kale, chopped
1 cup cabbage, chopped
In a large stockpot saute onion and garlic in coconut oil OR a little vegetable broth. Add tomato paste and stir. Then add celery, carrots, fennel, vegetable broth, bay leaf and red pepper. Simmer on low for 30 minutes. Add chopped kale and cabbage. Simmer for 10 more minutes. Season to taste with salt and pepper.
Note: I often add beans - anytime of cooked beans I have on hand - for added protein. Another option is to sprinkle a tablespoon or two of hemp seeds into your bowl of soup. Hemp seeds provide a complete protein and also those sought after omega-3's.
